“Local” is the hottest buzzword in food right now. In 2016, a National Restaurant Association survey indicated 68% of consumers are more likely to visit a restaurant serving locally-sourced items, and a 2015 A.T. Kearney survey of over 1,000 U.S. consumers found nearly 80% were willing to pay over 10% more for local foods. In response, up to 92% percent of restaurateurs say they plan to add a locally-sourced item to their menus within the year. As demand steadily increases for locally-grown and sourced foods, it’s of value to the restaurant and foodservice industry to integrate these foods into menus and elevate this in branding.
