Rochelle Trotter will demonstrate and educate on how to utilize dates, sweet potatoes, and carrots to sweeten your menu items. Rochelle features "healthy without being hard" recipes and presentations teaching healthy from the inside out and using food as our healing tool. In 2018, she created Aw, Sugar, an online platform which provides education, recipes, stress reducation strategies and motivation towards the successful implementation of tricks and tips on reducing the use of refined sugar.

With over 25 years of finance, branding, marketing, advertising and culinary industry experience, Rochelle Smith Trotter is a veteran corporate consultant and expert strategist known for making an impact.
She is the President and Founder of R’Culinaire, a strategic consulting firm specializing in the hospitality industry. She also serves as the Executive Director of the Charlie Trotter Culinary Education Foundation, which was established in 1999 by her late husband, Chef Charles Trotter. Rochelle also established the Charles & Rochelle Trotter Culinary Endowment in May 2016 to provide culinary scholarships. Additionally, Rochelle is the creator of Aw, Sugar a wellness based lifestyle program focused on refined sugar free education.
Prior to establishing R’Culinaire in 2002, Rochelle held high level positions at Yum Brand’s on both their Taco Bell and Pizza Hut brands.
Rochelle was often brought into multiple cross-functional teams to impact finance, marketing and regional culinary development. In fact, she was the only member of the Corporate Marketing team selected to serve on a Chef’s Council to aide in identifying potential new products for national system introduction. Other key corporate assignments included working at Turner Home Entertainment, as well as at Coca-Cola USA.
Aside from her business savvy, she has a lifelong passion for food, leading her to pursue her dream of training at The Ritz Escoffier in Paris and in some of the most prestigious kitchens across France and Italy. She also attended the Culinary Institute of America, The French Pastry School, and The Cooking & Hospitality Institute of Chicago.
Rochelle created R’Culinaire because she saw a true niche in the area of providing business backbone to culinary talents. She began her work with Charlie Trotter’s organization and served as Chief Operating Officer from 2002 – 2012. Additional projects have included Kerzner International (One&Only Palmilla Los Cabos, Mexico), The Venetian Hotel Resort & Casino (Las Vegas and Singapore), Tetsuya Wakuda (Sydney, Australia), Sodexho (Dallas, Texas), The Elysian Hotel (Chicago, Illinois), Calamos Investments (Chicago, Illinois), Macy’s (Chicago, Illinois), American Express (New York, New York), Canyon Ranch Spa (Miami, Florida), Sushi Samba Rio (Chicago, Illinois), One Madison Park (New York, New York), Chef Gray Kunz (New York, New York) and The Ritz Grande Lakes (Orlando Florida).
In 2013 Rochelle shifted her culinary focus to holistic wellness with an emphasis on using food to create solutions for common health problems. She earned her certification as a Health Coach in 2015 and began formally teaching women how to transform their life from the inside out by decreasing the amount of refined sugar in their diet. Based on client interest she created Aw, Sugar in 2018, an online platform which provides education, recipes, stress reduction strategies and motivation towards the successful implementation of tricks and tips on reducing the use of refined sugar. Her inspirational approach encourages women to realize they have the power to create the exact life they desire – without deprivation.
